First of all, I have to say I'm sorry, because I'm not a native and while I write almost everything in english, I've just figured out I know nothing about kitchens. *facepalms*


2 cups flour
1 teaspoon baking powder
3-4 tbsp olive oil (real olive oil, extra-virgin with 0,3-0,5% of acidity. Don't use any other kind of oil)
2 pinches salt

In a bowl mix the dry ingredients with the olive oil, then carefully add a little water, mixing it (use the hands!), until you have the right consistency. The batter can't be too soft or too elastic, must be harder than bread batter.
Spread some flour on a working surface and on a rolling pin (you can use a bottle if you don't have one). Use the rolling pin to spread the batter on the surface. Fold the batter in a square package and spread it again. Repeat the operation another couple of times (this is so that air gets in the batter and the crackers become crispy). Finally spread it until it's paper-thin (or as close as you can get it to be).
With a knife with a fine point cut the batter into little squares and put them on a baking tray, previously sprinkled with flour. With the tip of the knife pierce every cracker a few times (or else they turn into balloons and not crackers). Sprinkle them with oregano.
Put the tray in the pre-heated oven (medium heat) and let them bake until the edges turn gold.

Serve the crackers with salmon, caviar, foie-gras, smoked ham or, my favourite (and most healthy), with just a few drops of olive oil. And a good glass of wine.
